I woke up at around noon, like a normal sunday. I decided to make an omelette for "breakfast."I began by finely chopping some garlic and spinach. Then I melted some butter in a pan and while that was heating up I whisked 3 eggs in a bowl. When the butter was all melted and the pan was hot enough I poured the garlic in the pan to brown. Once the garlic had browned, I tossed in the spinach and made sure to cover it with butter. Immediately after I poured in the eggs and let them cook through. I topped it with parmesan cheese and deli turkey torn into small pieces. To finish it off I seasoned it with rosemary, basil, salt and pepper. Then just fold the egg over into an omelette. On the side I had a caesar salad, slightly odd combination but it definitely worked. The rest of the day was spent doing laundry and a run to old navy to score some deals.

Wednesday night cookin'
Earlier in the week, my good friend Marisa and I decided to start a weekly cooking-sesh. On Wednesday we made a basil pesto chicken, asparagus, and couscous.
What you'll need:
Ib of boneless chicken breasts(ours were tenders because they were cheaper)
Fresh asparagus, depending on how much you like
Pre-made couscous from the bag
1/2 cup Mozzarella
Tomato and spinach optional
salt and pepper
4 tbsp of basil pesto
This was a very simple to prepare meal. We preheated the oven to 400 and while that was heating up we put the chicken on a baking sheet. We coated both sides of the chicken with the pesto and put it in the oven for around 25 minutes. We checked to make sure the chicken cooked through and topped the chicken with spinach, tomato, and the mozzarella. We then placed it back in the oven for 5 more minutes or until the cheese melted.
For the asparagus I just melted some butter in a pan and sautéed the asparagus until they browned. I then seasoned salt and pepper for taste.
Also the couscous was just popped into the microwave for 60 seconds.
